Apple should let your stream your iTunes library to your iPhone over 3G, EDGE or WiFi.
I've been using the iPhone app 'Simplify Media' which lets you stream the music in your iTunes library to your iPhone over either a 3G, EDGE or WiFi connection. It's brilliant if your iPhones memory capacity isn't big enough to store you're entire music library, as you can stream it all straight from your computer. You install the app on your iPhone, install a little app on your Mac and create a account with Simplify Media to link the two parts. It works well, but this is the kind of functionality that Apple should offer out of the box (or maybe part of a MobileMe subscription).

Inappropriate?Streaming sounds like a dream but wireless networks are a big weak link -- and cell phone networks won't have reliable bandwidth for everyone to do this for many years to come. Moreover, while cell networks are far from offering any "cloud computing", you can bet that they will charge you dearly for controlling your data if/when they ever build the capacity.
Still, if you have a good wireless network at home, there are many developers offering iPhone / iPod touch users streaming options. See also http://www.dottunes.net/ -
Inappropriate?For anyone who comes across this idea, it might be worth looking at Spotify as an alternative. For £10pm you can stream any song you want to your iPhone over 3G.
