How to transfer music/data FROM iPhone to iTunes?

I have about 10 GB of music on my iPhone that I want to transfer to iTunes. It seems like this should be simple enough to do, but I can't figure it out? Is this even possible? When I go to sync music, I get an alert that says all existing content on the iPhone will be removed and replaced with songs and playlists from my iTunes library - definitely not what I want to do!
