Inappropriate?I don't think this is a built-in feature, but I do know that someone has written a script to do this, available here: http://koolinus.wordpress.com/2008/04...
Apple used to have a lot more options for color-coding things like this, but they seem to have moved away from it in a lot of applications. I'm assuming few people used these features. I don't, but you do, apparently.
One thing to keep in mind is that all of Apple's iApps share the same interface (and interface rules), which can feel limiting to some. So, if it's a deal breaker, you might be better off going back to Outlook. I like Apple Mail because it's a lot simpler and cleaner, but I know some people love all the extra features.
I’m hoping this helps

Inappropriate? Thanks for this Eric... I'll try this later on. I wanted something simple that appears in my toolbar, but this may be a solution. I want to try and avoid Outlook if possible, but might look around at some others. Thanks anyway.

Inappropriate?Highlighting in mail can be done using, apple-shift-c and then choose your colour!

Inappropriate?CMD+SHIFT+C makes the text change color, but does not highlight the text. I.e., as if you had a highlighter marker. Anyone know how to do this?
I’m frustrated
