Why won't Outlook Mail sync to iPhone, even though it will sync Calendar and Contacts?

Outlook will sync calendar and contacts to iphone, but it will not sync the Outlook email settings or emails. I should add that even though we have MS Exchange at the office, I'm told that we use a redirector (whatever that is) and that there would no need to do whatever is required to make iPhone work with Exchange.

Any ideas?
