Jumping to the Latest tagged release

My VPS is on tag 2007-08-15s (D5.2) and I'd love to update to the current tag (2008-10-22s) (D5.12). Obviously I'll do a full db backup and file backup, but what other steps should I follow. I'm not jumping to v6, nor directly upgrading any modules (there is mention of cck security), so is disabling non-core modules required?
