Deleting an activity, then re-entering it again a day+ later does shows the two activities on different days as two separate activities.
For example, I deleted work-related activities on Saturday. When I add them back today, then click on the time spent on the activity to get the report, it shows that I only started tracking that activity today.

Inappropriate?This is now fixed. If you delete an activity and re-add it later it is joined back up to the original activity.
