XXXXX Some St, Some City, State, Zip (MLS # XXXXXX)
Is it possible to change this to show up to be indexed as:
TEXT I WANT | XXXXX Some St, Some City, State, Zip (MLS # XXXXXX)
Is there an easy way to implement this?

At this time, no... however you could create a page/post with a single listing's shortcode on it... then you'd have a full custom page to edit meta info for.
