Custom designs?
I see, under Customize, a list of designs, but in my blog settings I only have the Handcrafted Stock as an option. Is there a way to try the others?

Inappropriate?At the moment no. We were running into people creating bad designs that would do not so nice stuff on page load. So we disabled public designs for now...
In the meantime, we are working a more robust design setup.

Inappropriate?Not atm, we will be working on an approval process. The design support in Jot.ly is about half baked, but you can create your own still.
You should be able to go to http://jot.ly/designs/new and create a new one.
Here are a list of available liquid tags:
{{ css }} - The css file for the css you input in the "new design"
{{ page_title }} - The page title, can be used for the title tag or for h1 tags
{{ page_content }} - The actual page content (read: blog posts)
