Customer signed receipts
I've used authorize.net for a few years for my ecommerce store and have a card present account for my traveling trade shows. I was using Aircharge for a little over a year which ran on a similar interface through another phone but had a receipt printer that came with the unit. I know that this doesn't have a printer, but what do you guys suggest for a receipt system (I don't want to use e-mail) for customers to sign after I run their card?

If you don't want to use email receipts, another option is to write out a receipt using a receipt book.
Receipt books come in various forms. Most have a place to write up the sale and capture customer signature, and will produce two copies of the receipt (one for you and one for the customer). You can find them at any large office supply store.
That said, Credit Card Terminal for iPhone runs Card Not Present transactions. These are similar to transactions that are placed over the phone and do not require a signature. Although, one of our customers has told us they like to take signatures because they have found them useful for fighting chargebacks.
