We do pass the email address to Authorize.Net. There are instructions for how to configure your Authorize.Net account for sending email receipts and where to enter the address in Credit Card Terminal on our Tips & Tricks page.

There are more screenshots in the App Store.
Essentially, when you tap the blue arrow icon there’s a secondary screen where you can enter customer contact information. Email is the first field on that screen.
When we get a minute we’re planning to enhance the website so that all the screenshots are available without launching iTunes.
