It isn't obvious to me in the interface: wher do I go to change things like frequency of archiving for an existing email account?

Inappropriate?Firstly, you must be logged in as the 'master' account to edit the settings. If you are logged in as an email address, you don't have permission.
Once you've done that, select the mailbox for which you wish to change settings for and then click 'Mailbox Settings' on the left.
