Customizing the destination of spam?
Not that Mail.app can train it, but I'm already using Mail.app for other things.
P.S.: I know this is under "Mozilla has a question for you, yes you!" but it's not actually. I'm just not as familiar with the state of the Thunderbird project as another GS user might be. While I may be a "Official Rep", that only means that I'm able to help others out, and that means looking up solutions to problems with existing features.
The more people who ask this question, the more it gets noticed.

Inappropriate?Yeah, it can be done. Go to Account Settings, then Junk Settings, then the options down at the bottom, "Move new junk mail to..." has what you need.
I should also point out that, unless I'm mistaken, Thunderbird only learns if the message is marked as junkmail, not if its in that folder. So you'll need to mark all the messages Gmail catches as spam as junkmail in Thunderbird.
