how can people I have invited as readers stop receiving emails whenever I make changes to the wiki?

Inappropriate?Click the 'Settings' link (in the upper-right-hand corner of your wiki) then click 'Notifications' in the left-hand column of the settings screen. You will see a list of all your users, followed by a button labeled 'Stop notifications'. Clicking that button will stop their notification emails.

Inappropriate?How do you redo this..ie send them notifications after you have accidentaly pressed the stop notification button

Inappropriate?If you are using a 2.0 wiki, have each user go to my.pbwiki.com and log in with their Account information.
Have them UNcheck the "Enable Notifications" box next to your wiki's name, and then REcheck it.
If you are using a 1.0 wiki, your users can log into your wiki, and after the "WIKINAME.pbwiki.com" type /notifications.php (so it looks like WIKINAME.pbwiki.com/notifications.php) and change the setting from "never" to a frequency they'd rather have.
If this 1.0 workaround does not work, users can create an Account and change their notification settings in my.pbwiki.com, like the 2.0 users.
