How do I configure the sidebars the same way as the pbwikimanual?
Normally the sidebar contains Sidebar, Folders, Share this wiki and Recent wiki activity. In pbwikimanual only the Sidebar is shown, the others are hidden. How can I do the same in my wiki?

You can't see some parts of the manual wiki because you are not a member of the wiki. Some portions are not visible to non-members (public visitors)
Try logging out of PBwiki and revisiting your own wiki to see what it looks like.
