I edit successfully, but then going back it shows old info
I go through and edit everything correctly (sort of time consuming, but I got all my data in there).. Then after a few view/edit cycles, I go back to edit and I see really old data in there, and all my changes are lost... As long as I don't click Save, I'm good, but when I go back, there's the old data. I think another editor may have had the window open, but was not making any sorts of updates to the page. Would this be the cause of this old data repopulating back into the window (some behind-the-scenes Ajax pushing the data from the open window back into the window I'm viewing?)

Inappropriate? It's possible someone un-did your changes by reverting the page to an earlier version. You can check this by going into the Page History (at the top of the page in a 2.0 wiki, at the very bottom in a 1.0 wiki), and seeing if there are later versions of the page that you have created.
If there are, you should discuss with the person who reverted the page, why they changed it. I find it's always better to be upfront with things than to sit on them :)
Best of luck!

Inappropriate? No, all they did was have the page open in \"Edit\" mode and it would revert every once in a while. Once they closed it and I verified they did, I didn't have the issue anymore. Its almost like the page he had open was trying to remember what he had on screen back to the database or something...
Won't make that mistake again, but it was frustrating as it was happening.
