Would it be possible to specify a public, wiki-wide license?
I'd like to add a Creative Commons license both to the footer of my wiki, but also specify that all content contributed to the wiki will be licensed under the same scheme when people sign up to edit.

It may be possible, using our Custom CSS and Java Script (premium feature). However, the simplest method would be to post the CC license in the bottom of your SideBar page. It will show on each wiki page automatically.

Ah, that sounds good for now. Would be nice to put the disclaimer on the page when people attempt to sign up/login, but I'll use the sidebar method for now!
