I just popped into Parallels to see if I see this. I'm using Leopard, a Dell UltraSharp 2001FP monitor and I don't see anything unusual in Parallels. Parallels version is 3.0 build 5540 (latest as far as I know).
I do notice that when I look at text in Windows up close, there are some colors around the edges as it anti-aliases the font to make it look smooth. I suspect that's Microsoft's way of smoothing fonts. I could be wrong.
However, I don't see any over the top color bleeding.
Are you using the latest build of Parallels? Which OS for Mac?-
