When you've got multiple editor windows open (once one is already open, selecting "Edit With Flow > In a New Window" will open another editor window), you can direct future tabs into a specific window.
For example, if I was editing "index.html" and "success.html" in separate windows, I would see this when attempting to edit another document via the contextual menu:

That being said, I agree that when no editing windows are open, the menu is redundant. In the official release of 1.0.3, look for this to be fixed. :-)

When you "Get Info" (CMD+I) on a PHP file in the Finder, does it say "TextMate" under the "Open With" label? Even if it does, clicking "Change All" might allow Flow to pick up the change.
In any case, pretty soon I'll be adding the ability to specify default-application per file extension, as many people have different defaults for different things.

Flow 1.0.3 (544) is now available, which fixes this issue among other things.
If you've got Flow set to look for nightly releases, just hit "Check For Updates" from the "Flow" menu, otherwise, head to <http://extendmac.com/flow/updates/nig...>/.

I think the idea behind this is that it allows them to do a number of additional things beyond what Twitter offers. For one, when Twitter goes down, I believe you'll actually be able to continue communicating with others (transparently) via the Tapulous network.
To me, this is a great thing. As far as requiring a Tapulous account goes, you just enter your e-mail address and a password in, and I believe it'll create the account for you on the fly.
