The bacon jam does not have to be refrigerated until it is opened. However, it will last longer if you pop it in the fridge unopened. It will last about 2 months unopened.

The bacon jam has a lead-time of up to 2 weeks, so that is why your package has not been shipped yet. I will check with the producer and see when they will be sending them out.
