When previewing the output on my laptop (single screen display), I get the same problem, really grainy text on a video background. But when it goes to a single image background, the text looks fine.

Computer has 4GB ram, Core 2 Duo and a nVidia 8800GT with 1GB vram.

I'll post a reply when I actually get to try this in church with a projector.
