Hi,
I think this problem is common to all, or at least many, of the web-based rich-text editors (anything using FckEditor, like PBwiki, certainly, and Google Documents as well). It has to do with the fact that online, you are ultimately editing HTML, and funny stuff can happen because of that. That probably doesn't matter to you, but I thought I'd warn you in case you try another online editor and run into the same frustrations.
Anyway, the solution is to do this:
1) Define a width for the table
2) Select all cells in a single column (by dragging your mouse down)
3) Right click, go to "Cells" and "Cell Properties"
4) Select a width (preferably in percent)
5) Do this for every column
The total percent should of course be 100%, so you'll have to do a little bit of math. I try to use nice round numbers myself, so if I have 3 columns, and the first is smaller and the other two are equal, I might set the first to "20%" and then "40%" for the remainder. You can also do this with pixels, but it's more math in your head and usually not worth it.

Changing the table size changes them all. Why can the tables not have individually moveable borders like any other decent text program in the world?
Trying to reformat text in the table is a mess.
Tried creating the table in word and inserting it, pbwiki just screws it up and it is unfixable.
