The issue is that you are using a 1.0 educator wiki. In that version of the product, those are in fact the only templates that are built in. You could create a 2.0 wiki instead, but many educators prefer 1.0 because they can use wiki invite keys (AKA passwords).
If you want to stick with your current wiki, go to the Template Demo web site, and copy and paste the desired template into your wiki, and tag it with the word "template".
Now you'll have the template available as a user-created template.

Please see below for what I see when I create a new page. (i.e. the only pbwiki page templates available are "classroom," "course syllabus," and "group project"...)
Is the "meeting" template (and others of its ilk) available only on business or paid wikis?
