If you setup the CalDAV account correctly, you can create events on the iPhone that will appear in the CalDAV calendar. I do this with Google Calendar. See this link on how to setup CalDAV calendars:

When you create an event on the iPhone, wait for the progress indicator to appear and disappear. That is the iPhone uploading the new event to your CalDAV calendar. If you quit the calendar app before it finishes, then your new event will not be uploaded until the next time you start the calendar app.
The only downside to using Google's CalDAV is that it does not support push to the iPhone (unlike using their Exchange setup). If you change your Google calendar online, the iPhone's calendar app will not be updated until the next time you start the calendar app (even if the app is already running).
