What's going to differentiate iPhone recording apps is hooking up with a hardware designer to provide a high-quality recording device that connects to the iPhone through the dock connector. I've been railing on this need for a year now.
The limitation of all of the existing iPhone apps is that you cannot control input levels, which make them all non-starters for any serious use (not to mention the lack of mic quality on the iPhone itself.)
Hook up with a hardware designer to provide a quality input snap-on, and you'll have the field to yourself, at least for a while.
