I would like to be able to mark - either by color or icon - those things that will require a real live person to sign for a package. I do not expect you to be able to automatically figure this out - but something to allow me to set this as an option.

I have this problem too. It is a service called Smart Post. Once FedEx turns the package over to USPS it will track as normal.
