Same problem here. Stopping and starting iTunes seems to sort it; but here's a thread on the official Apple forum about the bug.

On a Mac, I am having the same problem and am just beginning to research it. But, I can offer you an easier work around than restarting your machine.

When the CD disappears, open Disk Utility (In your Applications/Utilities) folder. You should see the CD listed on the left, and it appears greyed out.

Click the CD and then press the button at the top that says "Mount," and your CD should reappear in iTunes ready to go.

Hoping for a permanent fix, but this keeps you from having to reboot all the time, I hope.
