The oldest service entry is the date it's grabbing, yes. Probably makes sense to keep that just as the oldest fuel entry rather than oldest service entry - you can see the graph is spaced out evenly, not graphed with a true timeline at the bottom... for instance, if two of those gas fills were on the same day, they still show up the same distance apart as two fills a month apart.
It is not a bug, but I think it is an improvement that could be wrapped into the next version - fair comment! I will put it on my to-do list.

The idea in iPhone apps is generally to keep information independent of each tab - so if you tap away from gas entry and look at another car, the car on the "New Gas Fill" screen is still the same.
However, I think this makes sense to change it for this particular case, and this may very well be changed in a future version.
For now, do you understand how to change cars? Just tap the name of the car on the "New Gas Fill" screen.

In addition to email export, iTunes automatically backs up data for all applications on your iPhone each time you sync. This means if your iPhone is damaged, or you are migrating to a new iPhone, your data should be saved in the Backup and be able to be Restored via iTunes. This worked for me personally when I migrated from a first generation iPhone to the iPhone 3GS.
The email export is a dependable backup system for getting your data off your iPhone, too. It is a secondary backup system to Apple's built-in iPhone backups in iTunes.
Does this ease your fears about backing up?
Most apps have no further backup beyond these two methods - an online sync or small desktop app is a possibility I am investigating for future versions, the most likely implementation being online sync.
