However, I have to know -- when I click on "Private" so that it doesn't stream live, after I'm done recording and I click "Youtube" to upload it to Youtube, I'm not presented with any additional options.

Where does the video go?

You have to press the big round button on the screen. Then it starts streaming. ;)
