As I understand your question you ask if there is a way to set a service that is open for 24h, so that can easily configurate by setting the service working hours from 00:00 till 00:00; but there is no way to set a vary duration for service it should be absolute (30m, 45m...).
Though, you can open as much services as you need and set them each to a different duration: service1 - 30m, service2 - 45m...

Thanks for the compliments.
The times are the business times so they refer to the business time zone, though you got a point and we'll probably add some sort of info line at the business page that will mention it's the business time zone.
