Are you using the latest versions of iTunes and iPhone OS ?
I haven't been able to recreate this error — if you would feel comfortable sharing your backup folder with me I can investigate further. I would understand if you didn't want to though as it will contain personal information, but unfortunately it's very difficult to debug these problems without being able to see them first hand.

I've been testing this today and it seems to extract everything just fine here.
Unfortunately, it's very hard to track these problems down without being able to recreate them. If you would feel comfortable sending it, I can explain how you can send me your backup folder so that I can investigate this problem properly.

Sorry for the delay — if you still have this backup, would you zip up the ~/Library/Application Support/MobileSync backup and send it via Mobile Me (or any other file sharing website you use) to padraig.kennedy@gmail.com

Ben is right, copying the folder between machines will work and is a far quicker process than upgrading to Leopard.
If you do choose to upgrade, I'd recommend going straight to Snow Leopard (10.6) instead of Leopard. – Padraig, on September 11, 2009 12:41

Once you choose iPhone OS Files and click extract, you get the screen above — this is asking you where you would like to extract TO, not which files you'd like. Once you choose somewhere (Desktop is fine) it will then extract all of the relevant files and open a finder window showing the extracted folder. If there are any photos, they should be in there somewhere.
I don't think that ringtones are stored in the backups, so unfortunately you won't be able to do that.

If you extract the last item in the list called "iPhone OS Files", the address book database will be included in that folder. You can view this file with a SQLite viewer such as http://menial.co.uk/software/base/
