Logging into the gmail web interface counts as logging into Google Talk.
You're best off having a separate account that you create and don't even ever launch gmail in. Just sign out of it right away after creating it, and use that account for Infinite SMS.

The cell phone you want to exchange messages with has to have a US number. That's why the first line of our app description says you can send to the "50 US states".
However, you can use Infinite SMS on an iPod or iPhone over the internet from anywhere.
So you could use Infinite SMS in Mexico, for example, to exchange messages with someone in the US. Your messages would be free, and for the person in the US there are no international texting charges, just ordinary ones.
If you want to ask Google about support for other countries, you could do that in their forum:

What happens is if the iPod isn't plugged in, the Wi-Fi turns off after a couple of minutes in sleep mode. I'm going to see if Apple gives me some way to disable that in a future version.

I don't quite understand what you're asking. I've never used pinger phone. Our app has the look and feel of the regular iPhone SMS app.
If your mother is in China and has Infinite SMS, she could use it over Wi-Fi connections (or her data connection, but international data roaming is expensive) to send messages back to your cell phone in the US. The cell phone would see normal US text messages, not international text messages, and could respond. The responses would come back to Infinite SMS for the person in China.

That won't work, because the other person doesn't have a "google number". You always have to message someone first to establish a number for exchanging texts with that person. Read this:

Working on it, but we're still dealing with a lot of email from customers. I'll need to take some time where I can just sit down and get it working. And then it will need to go through Apple's approval process, which can take a couple of days or even over a week. So it's hard to say for sure at this point.
