HELP ME GET BACK TO " BLACK"

(1)_ How do I change the color of my emails from blue back to black?
(2) I have been designating junk mail for a month and the system still does not automatically put junk mail in junk column, leaving them in "in" box.

Every email I get the address is placed in my address book. How can I stop this. Before long my address book will look like the yellow pages of phone book. Thanks
