I'm sure the developers know this but Amarok manages this by mounting a jailbroken iPod / iPhone over SSH then uses some kind of magic(tm) to transfer the files... Cover art works and everything, maybe songbird could do this for the time being? Would imagine the offical Apple cables have those evil Apple authentication chips built in ruling out syncing to anything but iTunes. Boo hiss at you Apple, but you do make nice hardware.
