Ok, I've fixed this in Leopard through the Firewall trick:

go to System preferences > security > firewall >

Then select 'Set access for specific services and applications' and add iTunes to the list of applications by clicking the small '+' icon at the bottom left.

I also restarted and reset the Airport Express to factory settings.

I've installed iTunes 8 which no longer connects to my HiFi using airtunes. There is a popup that emerges after about 4 seconds of 'connecting' with the message: 'unknown error -15000'.
