Bleh, this thing erased my reply because I wasn't logged in.
Long story made short: icons are specified in an applications .desktop file, which are stored in /usr/share/applications

Different OS's report ram usage differently, some hide the full usage, some applications use very much variable amounts (ones that rely on data, and the data you got opened, the more ram it needs to use).
Really the best way to go about this is from reviews and checking for yourself - extremely hard to programatically determine this and report in a sensible manner.

I looked at the instructions myself and they are too technical. Synaptic is only designed for experienced users, normally Add/Remove or AptURL should do the job.
But anyhow - I believe the 2.0 release had a bug where it did not show up in Applications → Sound and Video as it should have.
Upgrade to 2.0.1 - since you already added the repository, you can do so by going to System → Administration → Upgrade Manager. Then it should show up.
