Cmd-Z should have an "Undo" function that undoes the last action.
If I "archive" or "delete", hitting Cmd-Z should undo whatever last action I just did...

Was this with a Gmail IMAP account? If so, we have a bug logged about "Undo Not Working With Gmail IMAP Servers".
Gmail's IMAP servers don't currently support the IMAP feature that's required to do this, but we're trying to figure out a work around for that.
