Does everything remain indexed?
If i index my gmail account once (gmail over imap) will everything remain indexed and whatever is added will be automatically indexed or do i have to index everything periodically?

Everything remains indexed and as more messages come in Postbox will automatically index them in the background when you are away from your computer:
