You need to click the (+) and (-) icons that show up when you select the star question.

Actualy my question is about the number of stars in the same line, your rating standard has a 5 star possible rating. I would like to make one with 10. In your survey example, you have 7. http://forweb.questionform.com/public...

I think you're adding a matrix type field to your form, and changing the number of stars is not available for that type.
You can add a simple star field (just drag the star field on the left column), and then select it and you will be able to customize the number of stars.
