Not unless Apple unlocks them. As for now, the iPod touch/iPhone are iTunes only, and we can't do anything about it.

Would you be able to elaborate? I have a TomTOM GPS (they run Linux). It is able to interface with my touch flawlessly. Including playing music back through the TomTom.
