Differing time zones

I find that after switching time zones that the the time zone is correct in the prefpane (on my mac), using the old time zone in the menu and using an entirely different time zone on the server (than any that I have visited). Is there anyway to make all of these read my current timezone from my mac? Otherwise, it becomes difficult to keep track of when I synced and what time my back ups are done.
