If I do a Google Search I found a lot more information about my interest. In this case is information about a particular restaurant. My question is: Why Trackur does not find restaurants reviews from yelp for example?

While Trackur does often include content from Yelp, it's not yet an officially supported source. We are looking to add this in the future.

Inappropriate?Is there a list of supported sources? I'm looking for a tool that extracts, from all the sources possible, what the public is talking about a particular restaurant. This tool will be a awesome resource for a restaurant owner or operator.

Inappropriate?We don't really have a list of sources as we use our own technology to aggregate content. I can say that most news, blogs, and micro-media are including. Your best bet is to take the free trial and test it for your needs.
