Is there a way to edit the crawl so you can change color and fonts? Maybe even the background color.

You can indeed change the font, size, color, and background color of the Carousel crawl.
In short, you can find the settings by clicking on the "Configure" button on the main menu of the Carousel web interface, then click "Channel Configuration" -> "(your channel name)" -> Crawl Settings.
