I don't know if changes to midi assigments/mapping in the Vortex require the editor, which can only be obtained by those with the hardware/registration.
    I don't own a Vortex so I don't have the editor software.
I don't know if you are usin a single Kontakt instrument (nki) or a multi (nkm)
I do a lot of Kontakt scripting and instrument design.
My understanding is the default settings for the Vortex powers up in Lower mode.
This means that the keyboard will send Note messages on channel 1 and that the lowest note on the keyboard will be C2.
If you press Upper, the messages are sent on channel 2, and the lowest note is C2 again. If you press Split, the lower half of the keyboard will send on channel 1 and the upper half will send on channel 2 (split after F3)(or after the 18th key). These 3 buttons .
You change the midi channel for the instrument or instruments in Kontakt to
match the midi channel sent from the Vortex...depending on how you have the Vortex setup.. as a whole keyboard...split..etc.
You must first setup the Vortex as the midi controller in Kontakt
If unfamiliar with Kontakt here is the midi controller setup guide
    https://support.native-instruments.co...
You could set to omni and see how that works with the Vortex just keep in mind if you are using a multi (nkm) all the individual instruments (nki) will respond simultaneously.
The rest is midi mapping how you want everything on the Vortex to work with the instrument in Kontakt by matching it's key/midi map either using the patch editor or midi learn in Kontakt.
Depending on the developer of the Kontakt instrument they may supply a key/midi map already setup for the Vortex. If not you'll have to create one by re-mapping the default map and saving as a new one.

Here is a more indepth guide for the Vortex functions/midi programming.
It is a few years old but much more detailed than the user/editor guides
Between the two you should be able to setup the Vortex to whatever you need.
