Bios of actors and others include only one religious description: Jewish.  Other religions are not noted.  "Scarlett Johansson comes from a Jewish mother and Swedish father." Look it up. You'll see it. What you do not see is "Maynard Popnick comes from a Catholic mother and Italian father."  Either include all religions or don't include any.

Lena: For what it's worth, the discrepancy you are talking about has to do with the idea that "Jewish" often refers to an ethnic group as well as a religion. You can agree or disagree with that, but it may explain why some people would write biographies in that way.

You know who considered Jewish as an ethnic group,  Hitler,

I think that it is a bad idea to consider Jewish as an ethnicity group.

I would agree that this is normal English language.

Jew
"A member of the people and cultural community whose traditional religion is Judaism and who trace their origins through the ancient Hebrew people of Israel to Abraham."

It is still inappropriate.

And it is unnecessary to know, for example, that the mother of Joaquin Phoenix was born in a Jewish family of New York (nobody cares).

It will be too long to correct 1700 biographies, and anyway I'm pretty sure that they will not even read your correction, and they will put the cult quote "Unable to Verify".
