Some people use "Watchlist" for that, if not interested in having one to keep track of what they will want to see. Also, you can create a list for anything. So, you can click the dropdown menu at the watchlist button and choose to create a new list, call it "watched," for example, then you can add to it from there. Also, you can rate what you watch. When doing searches, you can exclude those you've seen, which to the site means those you've rated.
So, there are several ways to do that.

How can I exclude what I've seen?

Use the "Advanced Title Search." At the search box, change "all" to "advanced search," then choose "Advanced Title Search." Enter your search criteria. Then, near the bottom you can choose to include/exclude those you've seen (or rated). The results will not include those you've seen, when excluding, so it's a good tool for locating those you'll like to see.
