Find your friend's page, and click on the Edit page button at the bottom. Near the bottom of the list of available fields to edit there is a listing for Other Data, with Gender as the only field. Click the drop-down box next to it and choose "Add item", then click Continue at the bottom of the page. Follow the instructions, and change your friend's gender to the correct one.
