I spent about 1 hour creating 2 new lists and they simply disappeared, even after I received an email confirming I created the lists. When I click on the link from the email, the page says: "The list you're looking for is unavailable. It may be a temporary problem. Try reloading this page." -- but it doesn't seem like a temp problem, the lists seem to be gone from my account.

The same thing happened to me! I created two lists, and when I looked for them today, poof! No more!

Are you still unable to see your lists? I'm not seeing any problems with my list or the list system in general.
One remote possibility is that you forgot to save your lists. If you start a list and don't save it, it will not directly show up in you list of lists. Fortunately, if that were the case, the lists would not be lost; they show up on the pending tab on your list page.
