'Great poll with a good list and great images. My favorite is the end of Psycho (the "wouldn't hurt a fly" scene) but when I think of most iconic I think of Cary Grant and the crop duster in North by Northwest.

seriously...so many great moments (love 'rope' in its entirety), and the first time you see raymond burr look at jimmy stewart in 'rear window' certainly holds up today, but...to compliment your question, the most iconic scene would probably have to be the crop duster sequence in 'north by northwest'...
