My #1 Vote: Production Design (& Art Direction), though the Cinematography makes it all better, so that too.
#2: Story/Worldbuilding
#3: Music
#4: Cinematography, if that didn't count from before.

I have a few suggestions, mainly for making more specific/fitting/fleshed out categories.

Production design could maybe be expanded by adding "art direction" in the same category, and could even be grouped in with house banners and official posters as you see fit. Visual effects, and costume/makeup could also be put in there, but they are just as justifiable as their own categories.
"Screenplay" & "Twists in the Story" could easily be grouped in the same category, and could be grouped with "story" in general. Maybe even "death scenes" could be grouped in there, though that can still hold its own as its own category.

FYC: "World-building" would be a nice category. I think it's different enough to be a different category from story/screenplay, but could also be grouped in with those if you need to. 
FYC: Background Score & Theme Music should be the same category, as it's all composed by Ramin Djawadi, and the opening theme is developed in the show as a leitmotif (meaning that they are closely connected).

2. Theme and background score + song are not same thing. I am keeping them.

2. My bold/italicized text probably came off as a little harsh. I probably should have though that decision through, and explained it a little better.

I didn't mean to say the score and theme music were the same thing. I was saying that they have a close thematic relationship within the show. The intro theme literally appears in the score as a leitmotif and is used for thematic development. The identities of the two are heavily influenced by each other, and it it doesn't make sense to separate them.

It's analogous to separating your male character options into a dichotomy between "Tyrion" and "All Male Characters Except Tyrion". I've studied film music rather in-depth, so maybe that'll help you understand where I'm coming from.

Note: It just occurred to me that you may have meant the opening title sequence rather than just the music, which would actually make a lot of sense. Sorry for the dispute.

The music of the opening title sequence is the main theme music of GoT. That's why I mentioned it in a separate option.

Alright, that makes more sense to me. It might be less confusing to label it as the main title sequence then. That's up to you of course, but that'll just be a FYC for now.

FYC Complexity
         Level of Detail

DC,  I think this my one item or one word answer to that question would be the complexity, which manifests in the multiple levels the show can be enjoyed on and the level of detail in everything that is done to support the show, from the writing, to the acting, to the locations, production design, costumes and more.
 
I think the show enjoyed as simple drama, but is so complex and has so many facets and levels that make to appeal to different audiences, on different levels and is extremely re-watchable. Plus there is backstory and meaning behind everything, from costume jewelry to statues to religious practices, etc..

My thoughts are the writing could be expanded to cover a couple of different elements as actual reasons: Dialogue (turn of phrases, catchy lines, expressions ) Story (multitude of individual stories and larger plotlines interconnected), and Plot Twists (maybe use a more bombshell image Hodor - Holding the Door http://www.imdb.com/title/tt4283028/mediaviewer/rm3057061888,  Cut Throat - Red Wedding http://www.imdb.com/title/tt2178784/mediaviewer/rm2443944960). Comedic Element, the show has its funny moments too. Action, the battles, the fights and scenes like "The Climb" provide plenty of action. Another broader reason, I like the show is the Scale of the show, it is big in every way. Another reason Doppel touched on is the Diversity through exotic locales, cultures and the building of different worlds. I think those are of the reasons others like the show too. Answere: Part 8.3 And I thought the part 6.9 is hard.
Today I saw GoT part 8.3  I'm totally blown away. The last twenty minutes I was breathless at the edge of the seat. I'm so curious about the next part.
To 8.3 there are fitting mostly all of your options. And the music at the last twenty, maybe 25 minutes was composed to the point, the atmosphere kept us sweatting. A mindblowing part of the series! It would be good to have an option:
All the elements, some always, some in changing order.

I hope this becomes a live-poll. Great!
