[1] Using Google Chrome browser latest on ChromeBook - I am clicking on my Watchlist in the upper-right, then clicking to View All (ahem) 620 items; I then click the Sort drop-down, choose "Date Added," then toggle the UP arrow to a DOWN arrow icon by clicking, but the list remains the same, it does not change. Might be a Bug Report.
[2] Also, any way to download my WatchList e.g. to CSV file, or XML, or view the entire Watchlist in one single HTML page?
[3] Any way to see Watchlist as a much "thinner" list i.e. vertically per list item, just a plain textual list of hyperlinks?

#2: Yes, they hid the Export at the bottom of the Watchlist page:
#1: I tried sorting on my Chromebook (Chrome 74, then updated to 75 and repeated the test), and had no trouble either Viewing the list or Editing it (I wasn't really clear what you meant by clicking to View All; I keep my Watchlist trim to use it for making lists based on searches.)
#3: Use Advanced Title Search to look at a Compact view of your list.
